Spicy Zucchini

2 to 3 Medium zucchini, cut into ½ inch slices
1 onion, diced
2 cloves garlic, minced
1 to 2 jalapeno peppers, minced*
3 medium tomatoes, cut into wedges
½ teaspoon oregano
¼ teaspoon cayenne pepper
¼ teaspoon ground cumin
2 tablespoons of chopped fresh cilantro or parsley

Fry zucchini and onion over a medium heat, until zucchini begins to soften. Add garlic and jalapeno and fry an additional minute. Add tomatoes and spices and lower the heat. Cook until tomatoes lose their shape. Add cilantro or parsley and serve.
*Note: As always you can adjust the heat of this dish by omitting some of the jalapeno or cayenne pepper.
